For The Kiddos!

Yes it has been a long time since I updated, and I am sorry about that, but I do hope that you were able to use some of my last posts as inspiration for your own meal prepping and getting on track. I promise you the more you do it the easier it gets!
     So a common question that I get is, what if you are not cooking for just you? What if you have kids too?! I have 3 kids ages 8,7 and 4. Do they always want to eat what I'm eating? Umm no, and neither does my husband some times lol but the majority of stuff I make can easily be adapted to something they do like or there are enough left over where I can make them a meal and then I'm already good with something that has already been prepared. I REALLY don't like to be in the kitchen and I don't want to be in there making multiple meals either. I always remember my Mom and Grandma saying, "you eat what we make, or you don't eat at all." And that's how it works in my family as well. After long days of working and all sorts of other stuff the last thing I want to do is spend my whole evening in the kitchen cooking.
   What's the point of that long story? haha, well here is a kid friendly meal that is easy, quick and my whole family loved. It's a healthy take on chicken nuggets!! It also got my kids into eating something a little different since it has coconut flakes on it, definitely not something they would have normally tried.


What you need:
1 lb boneless skinless chicken breast cut into stripes or nugget size pieces
3 eggs mixed in a bowl 
1/2 cup coconut flour
1/2 cup unsweetened coconut flakes
salt and pepper

How to get it done:
Set your oven to 350 degrees F.
Set everything up in a line or like a station 
First the flour, then the eggs then the flakes
Season the flour with salt and pepper and mix that up
Take a piece of chicken, and put it into the flour, roll it around so it is covered then shake it off to get the extra off.
Next dip it in the egg bath
Then into the coconut flakes.
Set the chicken onto a lined pan and continue the process until all the chicken is ready to go.
Put the chicken into the oven for about 20 min turning about half way through till the outside becomes browned and it is cooked all the way through.

I served this with sweet potato fries and some green beans. It was a hit at my house and I hope it will be at yours as well. My kids of course love ketchup so that's what they dipped theirs into but for my husband and I, I made the sweet chili sauce that is posted earlier on my blog. The coconut flakes gave the chicken a fun crunchy texture and because it is the unsweetened kind it doesn't have a strong taste so be sure you season the flour really well or they may seem bland.
