Spending Time Out Side the Kitchen!

I knew today was going to be busy right from the moment I woke up! My oldest was so excited about her class field trip today and was rushing to get ready to go, while my youngest was having one of those mornings where he just wanted to stay in bed. While trying to get him up I was still trying to get myself ready for work too. I had an 8am class to coach and some other stuff too do so I needed to be sure to get some kind of fuel in me. Protein shake to the rescue! While I'm not big on just doing shakes sometimes it's the easiest, fastest thing to do, so in the blender I put my protein, almond/coconut milk, strawberries, bananas and a
little baby spinach.(I know sounds weird, spinach but trust me you don't even taste it!) Perfect to get me out the door and hold me over till I got home.






Once I got home I made my brunch. Sometimes all you need to do to change things up is cut up your food differently. This is sweet potatoes cut into sticks and some of the grilled chicken from my meal prep day also cut into same size strips. I cooked them together in bacon fat then put two eggs on top. Covered it will a lid and let the eggs cook. Once they were to the way I like them I put everything onto a plate and added some cilantro and hot sauce. Completely satisfying and gave me the energy I needed to continue on with my day.  

Dinner! After running around most of the day and then going back and forth from CrossFit kids and then both boys baseball practices, the last thing I wanted to do was cook! But doing fast food was just not an option I even wanted to consider. Meal prep saved the day again! All my veggies were already chopped up from Sunday so all I had to do was cut up some chicken that was already cooked as well and I added some pineapple for an amazing stir-fry! Totally hit the spot and it probably only took me about 10 min.








One of the best tips I can give you is to be creative with your food. Don't just loot at it like ok I'm going to have chicken and vegetables again, figure out what else you have and what you can mix together. Some times the best meals are the ones that you just throw stuff together and hope for the best!
