Some times my Tuesdays feel more like a Monday! I don't know what it was about Tues but I was just tried!
It was so nice to not have to worry about cooking, and what I was gonna eat and what my family was gonna eat! I was actually able to sit down and focus on my homework for the week and some house cleaning before going into work!
So what we have here is my lunch which was grilled chicken with avocado and green beans with blueberries. I cooked the green beans in the left over bacon fat from my breakfast and when they were just about done tossed the blueberries in the pan so they could get warm. It was pretty awesome. The blueberries almost made like a sauce for the green beans.
Then for dinner I used the shredded chicken we made in the crock pot. The kids had regular tacos with it and I did lettuce wraps with an extra side of veggies.
