I had plenty of time this morning to have an awesome breakfast. It was just one of those days where things weren't rushed and I could actually put something together and sit down to enjoy it! I put some coconut oil in a pan and threw in my sweet potato cubes to cook up. While that was cooking I cut up some of the steak we had grilled on Sunday, and before the potatoes were done I threw the steak in with them to just heat through. As that was all cooking together I chopped up some strawberries and cilantro. For some reason I just had a craving for cilantro and was planning on just putting it with the steak but some ended up mixing with my strawberries and that ended up being an awesome combination! After my steak and potatoes were done cooking I put them on a plate and fried up an egg just enough to cook the white but leave the yolk runny to make a sauce on top of the meat and potato mixture when cut open. This breakfast was amazing and super filling which was great since I ended up really need that fuel for what turned out to be a busy day!
Dinner on the other hand was a little rushed. I didn't get home from work till close to 8:30 and was pretty tired. Going into any extra prep was not something I wanted to do, so lucky for me I already had the cooked chicken in the fridge, while that was heating up I just put some asparagus on the stove and cooked it up in some coconut oil and spices. (salt, pepper, garlic and lemon) You've probably noticed I've been using paper plates a lot lately as well. Who wants to do dishes?! This was a perfect meal to end the day, it filled me up enough but not to the point where I went to bed totally full, which can sometimes make it hard to sleep.
