So the other day I was looking through my fridge and having no luck finding something to put together. It was towards the end of the week so a lot of my meal prep stuff had run out and I just had some random things to use. Couple things about me...
1) I really like sauces to put on things or dip things into.
2) I'm a huge fan of cilantro
3) Avocados are like a daily must have.
4) I get frustrated and hangrey real quick when I can't figure out what to eat. LOL
I ended up grabbing some left over grass-fed ground beef. Regular iceberg lettuce (although I think baby spinach probably would have tasted better if I had some on hand, but I didn't). And some cherry tomatoes. I set everything on my counter and figured alright, it looks like I'm having some kind of salad. But I don't have any salad dressing, (because oddly enough I don't really like that stuff) and felt this would be really boring on it's own. I was going to go for my usual paleo friendly mayo that I use on my chicken salad but wanted something a bit more.
What I ended up with was totally awesome and really hit the spot!
Avocado and Cilantro Lime Dressing
I grabbed an avocado
1 lime
1 lemon
About a handful of cilantro
1/3 cup light olive oil
1 egg
2 cloves of garlic
I juiced the lemon and lime into a tall cup for my immersion blender, (or you could use a regular blender, you're just going to have to scrape down the sides a few times).
Cut the avocado in half, took out the seed then grabbed a spoon to get all the goodness out and into my cup
Cracked the egg into cup
Gave my 2 garlic cloves a rough chop them threw them in as well along with my handful of cilantro.
Last I poured in the 1/3 cup of light olive oil.
Using my immersion blender I mixed it all up until it became creamy and a beautiful pale green color. I ended up adding a little salt to it but you can test it out at this point and see how you feel about adding salt or not.
I guess you could say this ended up being a variation of a taco salad! It was awesome and a lot more filling then I thought it was gonna be.
This really only ended up taking me a few minutes to throw together, so it would be perfect for a lunch on the go or something that you prepare in the morning or even the night before as long as you store it separately and then mix the dressing and salad together right before you are going to eat.
