Bringing back the food!
Hey guys! So I'm still alive! This summer has been a lot busier than I thought it was going to be!
We had an awesome little vacation out in California for my brothers wedding and I've really focused a lot more on my CrossFit training. Learning new skills, working on the things I'm bad at and more recently starting a new program that is more focused on getting my strength up.
On that note, one thing I have had to re-learn while doing CrossFit is you have to adapt your eating to the type of training you are doing. I've really loved following the Paleo style of eating and have seen a lot of great things come out of it. My hair, skin and nails look better and I feel better eating clean, quality foods. The one thing I didn't like was that I seemed to be shrinking away! My goal for doing Paleo was not to lose weight but to just clean up the way I was eating and see what Paleo was all about. The problem was I didn't realize that your carbs drop so much when you are really only getting them from veggies. If you are trying to lean out then it's a pretty good way to go, but if you are an athlete your performance will end up suffering because you won't have the energy you need to perform well or recover well.
Oh the beauty of carbs!
So, one of the changes I have made is adding back in white rice AND white potatoes after a workout when your body can really use them. Sticking with more of a "paleo" way to go of adding more carbs, I made these awesome bacon fried cinnamon plantains. They turned out great! A little sweet, a little salty and a great carb for after a hard morning workout. If you've never had plantains before this is a very easy way to start.

Bacon Fried Cinnamon Plantains
Grab your plantain and cut the skin off by making 2 to 4 cuts down, then peal them down.
Cut up your plantains to the thickness you like. I went about 1/2 in so they stay soft on the inside. If you want them a little more crunchy go thinner.
In a pan add your bacon fat, (you could also use butter or ghee) heat that up so it's pretty hot.
Add your plantains in and sprinkle with a little cinnamon.
Let them fry up till they are a nice brown color.
Then flip them over and do the same thing, add cinnamon and let them fry.
That's it! So easy and they are awesome! A little salty from the bacon, a little sweet, all around a good clean starchy carb!
