Building On Ideas

I'm not the biggest fan of leftovers, BUT it does make life a lot easier. One thing (out of many) I learned from my grandpa is how to turn leftovers into something totally different from where it started and that sometimes but just adding one more thing it changes the flavors and feeling of the dish.

Here is an example, last night I had a 3 block dinner. It consisted of a 4.5oz turkey burger cut up 2 cups of spaghetti squash 9 almonds crushed up and put on top and then 1.3 cup of fresh mango for "dessert". It was so much better than I thought it was going to turn out which was awesome.

While I was eating it though I kept thinking about how I could improve on it or even just use this as kind of like a base to build off of. So became my breakfast!!! I swapped the turkey for 3 eggs and did 2 cups of spaghetti squash with 1.25 cups broccoli. It was pretty great! I cooked the eggs just over easy so the yolk became like a sauce when I mixed it with everything else and the almonds along with the broccoli gave it a great crunch.

2 super easy and fast meals that met my 3 block meal requirements and tasted awesome! Are you a fan of leftovers? What kind of transformations or little tweaks have you done with them?
