Snack Time!

Here is a great little snack that would be perfect for post workout. It's got your protein, carbs and natural sugars in it to help your body recover after the awesomeness you just put it though! This originated from a post from Stupid Easy Paleo and I adapted it a bit adding in the protein. Yes, it has rice in it and although I don't eat rice very often the good thing about white rice is that it's gluten free! It's super fast to make if you already have some leftover chicken or some other kind of protein on hand, and you can eat it hot or cold so that makes it great for portability as well!

What you need:
  1/2 lb of chicken or any kind of protein you like
  3/4 cup rice (cooked)
  1/4 to 1/2 cup coconut milk
  1/2 of a Mango cubed up

Cook the rice like you normally would in water
Once that's done add the rice to a bowl and pour the coconut milk over it
I had left over pan seared chicken I just chopped up
Cube your mango
Throw it all together in a bowl, if the rice soaked up a lot of the milk just add more.
Mix it all up and enjoy!

This is probably one of my favorite "treats" to have after I've finished training. You could also add some Vanilla to it if you wanted a little more sweetness or even some honey. I found the mango made it sweet enough for me already, but everyone is different, put your own little twist on it!
