Muffins!

Hey guys!
  I hope all is going well, I can't tell you how happy I am about being on spring break right now, well besides the kids yelling in the background who's turn it is to play Mario! Good grief, I think it's reading time lol! Anyway now that I have a bit more time in the morning because there's not school this week I will be trying out some recipes I found and changing up some old ones I didn't like. Last week I made a batch of lemon blueberry muffins from the book Practical Paleo by Diane Sanfilippo that were amazing! HEB (the store here) was having a huge sale on organic blueberries so I grabbed about 4 boxes of them!

The batter to these can be used for just about any kind of muffin you want to make. I think I'm going to do a lemon poppy seed next and a chocolate chip one for the kids!

What you need:
1/2 cup butter or coconut oil, melted
6 eggs
1 lemon, juice and zest
1 tsp vanilla
1/4 B maple syrup
1/2 c coconut flour
1/2 tsp salt
1/4 tsp baking soda
1 to 1 1/2 c blueberries

Set your oven to 350 degrees
In a bowl add all your wet ingredients, the butter or coconut oil, eggs, lemon juice and zest, vanilla and syrup and mix.
Then sift in the dry ingredients, the coconut flour, salt, and baking soda.
After it is all mixed together, carefully fold in the blueberries.

In your muffin pan, put about 1/4 c of the batter into each one. and bake for 35 to 40 minutes.
