I'm back! I know it's been a week, and good grief what a busy week it has been!
This last week started the first part of the CrossFit open workouts and I have to say I'm pretty proud of how everyone that came to the box did and even myself for doing it. Also this week I have two final exams and a midterm, so things have been a little crazy. On another good note, after these two finals I only have two classes left before I get to take a bit of a break from school! Whoop love it!!
Alright so, some of you saw my picture from yesterday of what I had for lunch, and not only did I have that for lunch but I switched up the inside and had it for breakfast as well. What is it? Tacos, with paleo friendly, homemade tortillas!! I have tried so many different recipes for paleo tortillas and all but this last one I have not cared for at all. They either fell apart or were to eggy. This one is from Stupid Easy Paleo and it's the only one that I really like. The great thing about it is that it doesn't have much flavor so you can either add your own by adding spices to it or just let the filling take over the flavor part. So if you want a sweet almost crepe like flavor you would just add vanilla to the recipe. Yesterday I made them as they are written in the recipe because I wanted the taco filling to be all the flavor. This morning when I made them, I added a little maple syrup to it and gave it a bit of a sweet flavor since I was filling it with ground sausage and eggs. Also for my son, I filled it with strawberries and blueberries after putting a little vanilla in the actually recipe and he loved it!
On to the recipe!
What you need for the Tortillas
2 eggs
1 tsp melted coconut oil
1 TBS water
1/4 cup arrowroot powder (this is like paleo cornstarch)
1 tsp coconut flour
A pinch of salt
Turn the heat to about med with an 8 in fry pan, let it get pretty hot so the batter doesn't stick.
Break your eggs into a bowl and then mix in the water and melted oil.
Next add the dry ingredients and mix well together, try and get all the lumps and bumps out.
Next you are going to take about 1/3 cup of the batter and pour it into the middle of the pan
As soon as it hits the pan start moving it around so it covers the bottom of the pan, it will be pretty thin.
Cook on each side about 1 min.
That's it! Now you have paleo friendly tortillas that you can fill with whatever you like!
Yesterdays lunch filling was;
left over buffalo chicken thighs with steamed red cabbage and apple.
This mornings breakfast filling was;
2 scrambled eggs, cilantro, and ground pork seasoned with a little maple syrup, ground pepper, salt and cumin.
This little tortilla is so versatile, anything you would use a regular tortilla for this one can easily take the place, and it's home made, you know exactly whats in it and it only takes about 5 min to do! The mission tomorrow is to use it for enchiladas! I'll keep you posted!
