Quick... I need food!

      Today has been a busy day, well actually the last 2 weeks have just been busy! I'm usually very good at balancing things that need to get done, kids, house stuff, homework and work, while still being able to get meals done as well. Definitely have to thank my husband for all the help he does as well.
So today was one of those days where I just didn't know when I was going to get to sit down and eat a good meal. My breakfast turned into a shake I threw a bunch of stuff in and grabbed a couple hard boiled eggs and I was out the door. Kids to school, errands to run and appointments to get to. By the time I got home from all this stuff it was lunch time and I hadn't prepped my food for the day, so of course I was starving and debating on what to make.
     
       Did I really want to cook something, and if I did how long was it going to take?! What ended up happening I have to say is a miracle! I decided to use some of the leftover shredded chicken from the night before, and whip up some paleo mayo (cuz seriously you can't go wrong with that, it takes like 30 sec). Then of course I needed to make some bacon to go into this, so while the bacon was cooking I also put some more eggs in a pot to hard boil so I can make Scotch eggs later on for tomorrow. Also while I was waiting on my bacon and now my eggs, I decided to chop up the ingredients I needed for the shrimp ceviche I was planning on making to also have for tomorrow. As I was putting all the ingredients for the ceviche in a bowl I pulled the bacon off the stove and put them to the side to cool off a bit. Turned off the burner for my eggs and let them sit as well for 10 min, then put the ceviche in the fridge. Holy cow I just prepped my lunch, and got started on 2 meals for tomorrow! I have to say I was pretty impressed with myself. And all this only took me about 20 min!
   
      Now it was time to eat! With my chicken salad I made (you can find that recipe back a few posts) I decided to wrap it in some iceberg lettuce for a little more crunch and texture. It was amazing! Super fast, really delicious and got me fueled up to take on the rest of the things I need to get done today!  The point of this post is to show you that when you can get to a point where you are consistent with eating clean healthy food, you don't jump to the thought of picking up fast food, or grabbing some unhealthy just because it's quick. Those healthy meals you have learned to throw together come to mind just as fast and you end up making smarter choices that your body will thank you for!
