Here's a fun fact about me, a few years ago I lived in Bayan, Kuwait. My husband took a job as a contractor on a base in Kuwait and after him being gone for almost 2 years we decided that if he was going to stay over there any longer than we (me and our 2 kids at the time) were going to join him. So we packed up shop and moved to Kuwait for a couple years. It was a pretty interesting experience. I met some amazing people, (miss you Michelle, Sune,Sarah, Jamie D, Jamie R and Dawn!) tried some very different food, saw a lot of camels and my youngest was born there!

Anyway, what do you do when you live in a very hot country with 2 little kids and you haven't met anyone yet? Well, while we waited for all of our stuff including the truck to be shipped over from the states, I watched a lot of the cooking channel! I love the food network and the cooking channel. Not that it was very much different over there, but it was the BBC cooking channels, so the food was a bit different. One of the recipes that I always thought looked awesome was the Scotch egg. It seemed simple enough and would pack a pretty awesome protein punch!
So what is a Scotch egg you may be asking... great question!!!
Typically, a scotch egg is a hard boiled egg wrapped in ground sausage then rolled in flour, corn flakes or bread crumbs and then deep fried. BUT, since I would like a healthier version we are going to skip the flour, bread crumbs and deep frying part. Trust me when I tell you, these are still amazing! They are perfect to eat in the morning or an hour or so before a workout, because they have your protein and fat all in one little package. Also I like them because you can prepare them in parts if you need to. For example, you need to have hard boiled eggs to start with, so if you don't have a lot of time, do the hard boiled eggs one day and then finish the rest the next day or at another time. We are going to do 6 because if you are like me you are going to want to eat at least 2 of them at a time! Ok, so here is the recipe and directions!
What you need:
6 hard boiled eggs.
1 lb ground pork (you can use any ground meat you want but pork seems to be more breakfast like)
1/2 to 1 TBS honey or Maple syrup (yum!)
1/2 TBS cinnamon
Salt and pepper
How to get it done:
Put your eggs in a pot, cover with water and bring to a boil. Once the water is boiling, cover the pot with a lid and turn off the heat. Let them sit for about 10 min. After that run them under cold water or throw some ice in with them to stop the cooking process. Peel and set aside.
In a bowl put your ground meat, seasoning, and honey or maple syrup and mix together. Don't mix to much or you will make the meat tough. You just want to get everything incorporated.
Turn the oven to 350 degrees
Measure out six 1/3 cup servings of the ground meat mixture. Pat them out in your hands like hamburger patties to get them ready for the eggs.
Put your hard boiled egg in the middle of the patty and fold the meat around the egg, try to get it as evenly around the egg as possible with no holes or cracks.
Place the covered eggs on a foil lined baking sheet and throw them in the oven for about 15 to 20 min.
That's it! These little guys are great hot or cold and any time of day. They would be great with a salad as well!! Try them out and tell me what you think!
