Breakfast For Dinner

One of my favorite things is breakfast for dinner.

I have no idea why, but even as a kid I loved having pancakes or eggs or anything breakfast like for dinner. This was something I threw together the other night because I wasn't really in the mood to cook, it was late and I was super hungry.

The first time someone asked me that the only time I could think of was when I use to work as a server at Olive Garden and would eat the Zuppa Toscana, that has kale in it! I had heard so many things about the benefits of eating kale, like how much iron and calcium is in it, but for some reason delayed trying it for a long time.

Finally one day in the store I just decided I was going to grab some and try it out, I'm always trying to get my kids to eat new things so I figure I need to as well. I got home and tried to figure out what I wanted to do with this kale. My first attempt was just in a salad, now I don't know about you but this is not my favorite way to eat kale, it has a bitter taste to it and a thicker texture than any other "lettuce" I've ever had before so this just wasn't my favorite.

My second attempt has been the one that has stuck, why? Because it has bacon in it of course! Let it be known, that bacon is the duct tape of food! Even with my youngest, it seem like if I put some bacon in with anything else he'll eat it! I've also got a recipe for a soup that has kale in it, but I'll save that one for another time. So in the directions I will tell you how I made this awesome meal of kale, sweet potatoes, bacon and eggs. 

What you need:

3 Eggs
1 Bunch of Kale
1 Med sized sweet potato chopped up in small squares
2 to 3 slices of bacon

How to get this done:

Wash, rinse and dry your kale really well, and then cut out the center stem part. Chop the kale up into easy to eat pieces, just run your knife through it a couple of times. 

As always, start by putting your bacon in a pan and cooking that up the way you like it. Then set aside.

Next put your potatoes in the bacon fat and let those cook up about 7 to 10 min or until tender when you put a fork in them Season those guys with salt and pepper.

Next you are going to put your kale in the pan with the sweet potatoes, season again with salt and pepper, or I like to put in some garlic salt and cayenne pepper and stir those around. Also sometimes I will put a lid over the pan to make it cook a little faster but you don't have to, I'm just impatient when it comes to food. 

You will know the kale is done when it has wilted down to almost half the size of what you started with and is a rich green color.

Throw your chopped up bacon back into the pan and let those cook for just a couple minutes letting all those flavors get together. After that empty the pan onto a plate.

Grab your eggs and cook those guys up right in the same pan you had everything else in. I like over easy eggs because when you cut into them the yolk runs into everything else, it's like adding a sauce to the dish without extra work. 

And that's it, put those eggs right on top of everything else and enjoy! This is great for anytime of day in my opinion since it has everything you need to keep you  fueled up or re-fueling you at night from whatever you tackled that day.

  2. Speaking of breakfast, I usually put spinach in my breakfast fruit smoothy. Can I use kale instead? Would it give the smoothy a different flavor or just the added nutrients like spinach does?

  3. Hey, great question! You can totally put kale in your smoothie instead of spinach. It will taste different since kale has a stronger flavor. I would suggest starting out by mixing them together till you get use to the kale flavor. Also don't forget to really wash the kale and take out the middle stem before you put them in the blender. Kale is really great for helping your body to absorb calcium and iron much better than spinach so that is a great bonus. Don't totally take your spinach out of the mix though since it has great benefits to it as well! Hope this helps, enjoy and let me know what you think!
