Oh the magic of Mayo!



Since posting a few pictures of an amazing chicken salad on my Instagram and facebook, I have gotten quite a few request for the recipe, so I'm going to break it down for you, and you can thank me later for this awesomeness! The great thing about this Mayo is that it's homemade, and Paleo friendly! The original recipe I got from the website PaleOMG, and like most recipes I find, I usually end up changing or adding things to make it more my own.
If you look at the back of a store bought Mayo you will see a pretty long list of ingredients, and why is there sugar in it?! This is my go to Mayo and seriously only takes about 2 minutes. In the picture I used it in a chicken salad, I've also used it as a fruit salad dressing or dipper by just adding in some honey for sweetness. So, on to the recipes!

Paleo Mayo!
2/3 cup oil (In the picture I used Extra light EVOO, but avocado or walnut is really good too.)
1 tsp lemon juice
1 egg
Put them in a tall cup and mix them up with a hand mixer. It takes about 30 seconds for it to turn white and then it's done!

These are the basics for it. Depending on what you are going to be using it for you can season however you like. My favorite combo is, salt and pepper, cumin and garlic powder. I've also thrown in some red pepper flakes or cayenne pepper for some spice. If you are using it for a fruit dressing just add 1 to 2 TBS of honey.

Chicken Salad
1 lb of chicken
4 celery stocks
1 green apple (or you can use 1/4 a white onion)
3 strips of bacon

Get a pan hot on the stove and throw your bacon in and let it cook getting to the crispness that you like. Once that's done remove the bacon and throw your chicken into the same pan letting the chicken pick up and cook in all that bacon greatness! While your chicken is cooking chop up your celery, bacon and apple or onion. Once your chicken is done (no pink in the middle) chop that up as well and start mixing everything together. This should feed about 2 to 3 people, but I'm not gonna lie, it's so good I usually eat half at lunch and then go back for the rest a few hours later!
