Some of you were lucky enough to try these awesome bars the other night at the box. Those of you that didn't, really missed out!
This recipe came from another blog that I follow called Stupid Easy Paleo. Stuff you will need
1-1/2 c nuts ( I used 1 c almonds and 1/2 c macadamia nuts)
20 Medjool dates ( these are the big dark ones. You can find them at HEB in the produce section where all the dried fruits and nuts are they are prepackaged, or at the HEB in Belton, has them in the bins that you can package yourself)
1/3 c cocoa powder
Zest from an orange
1 TBS of orange juice
Pinch of sea salt
How to put it all together!
I did this in a food processor, if you don't have one, use a blender to chop up the nuts or just use a knife and chop them up the best you can. You want them to be pretty small. Once chopped up put the nuts into a bowl
Pit the dates if they have seeds and put them in the food processor. Pulse a few times till they start to break down a bit. Again you can just chop these up as well.
Add in the cocoa powder, orange zest and juice, and the sea salt.
Process until a huge ball forms, if you are using a blender you may have to do this in small batches.
As soon as everything is blended together take out the giant ball and press it into an 8 x 8 dish lined with wax paper or parchment paper. You can also form these into small balls and put on a plate.
Put them in the freezer for about 20 min so they can set up.
After that you can either take them out of the dish and cut them into bars (about 12) if you made them already in bite size, start to enjoy.
Keep them in the refrigerator to keep them fresh or you can keep them in the freezer a bit longer, just be sure you wrap them in plastic wrap so they don't get freezer burn.
Hope you guys enjoy the bars! You can change the ingredients up however you like. The base is the nuts and dates, from there you can add any kind of flavor combo you like! I will be experimenting with a few other flavors in the next couple weeks, and will post those as well!
