Breakfast Bowl!



This is by far is my favorite thing to eat for breakfast, and you can switch it up so easily depending on what you have available at your house!


Alright guys, this is my breakfast bowl! I posted a picture of it a couple weeks ago on my Facebook and Instagram accounts, so once again I'm going to share my awesomeness with you! I am a big fan of anything that can be mixed up and thrown into a bowl. Something about mixing all those great flavors together and bowls being more transportable then plates makes this very appealing to me. On to the goodness!

Breakfast Bowl

1/2 med size sweet potato
2 or 3 slices of bacon (AppleGate is a great brand you can find at Target, Walmart and HEB)
3 eggs
1/2 c chopped green onion
Salt and Pepper to your taste

First throw your bacon into a pan on Med heat and let it cook to your liking. While the bacon is cooking, chop up your sweet potato into about 1/2 in pieces so they cook quickly and evenly. Once your bacon is done take it out of the pan and put it on a cutting board. Throw your sweet potatoes right into the bacon fat and season those bad boys up however you like, I put just pepper because the bacon adds enough salt for me. Chop up your bacon while the potatoes are cooking and mix up your eggs to get them ready for the pan. Be sure to mix the potatoes around, they will take about 7 to 10 min to fully cook through. They are done once you can easily stab them with a fork. At this point turn the heat down just a bit and put the bacon back in the pan with the potatoes, then add your eggs, more salt and pepper to taste, along with 1/4 c of the green onions. Mix that all together until the eggs are scrambled and everything is cooked through. Empty the pan into your bowl, top with the other 1/4 c of green onions and enjoy!
